Thumbprint Cookie

Ingredients:

1 cup unsalted butter & softened

2/3 cup granulated sugar

2 large egg yolks room temperature

1 teaspoon pure vanilla extract

1/4 teaspoon salt

2 and 1/3 cups flour
Filling:
-
1/2 cup Harder's syrup (Any flavor, we used Liliko'i)

1 tablespoon corn starch
-
1/4 cup water
Drizzle:
-
1/3 cup Harder's syrup (Any flavor, we used White Bunny syrup)

1/2 tablespoon corn starch
-
4 tablespoons water
Directions:

Preheat oven to 350°F and line two large baking sheets with parchment paper, then set aside.

Cream together the butter and sugar using a hand/stand mixer. Then add in the egg yolks and vanilla extract, combined well. Finally, add the flour and salt and mix. The mixture will be a little crumbly at first but it will come together as you continue mixing it.

Using a one-tablespoon cookie scoop or measuring tablespoon, measure out the cookie dough, roll into balls, then place on the prepared baking sheets.

Use your thumb or teaspoon, press an indentation into each ball of cookie dough (do NOT go too hard as you will break the dough. Cracks in the dough while indenting are normal).

Spoon 1 teaspoon of filling into the indentation in each one.

Bake at 350 for 12-15 minutes. Set aside and cool for at least 10 minutes.
Filling

Add all filling ingredients to a small pot and whisk.

Cook on low medium heat until boil. Keep whisking to avoid burning.

Once the filling thickens, remove from heat and cool for 10 minutes before adding it to the cookies.
Drizzle

Add it to a piping bag or ziplock bag and drizzle over the cooled cookies.
